Spicy Cabbage Soup

I had a friend who once went on a cabbage soup diet. She ate little else but cabbage soup for a few days. She was very successful losing weight on the diet, and kept saying how the soup was really pretty tasty. She said she poured on the hot sauce and that it was basically just cabbage cooked in water. I’ve kind of been wanting to try cabbage soup ever since. These are my results! Hope you enjoy!

Spicy Cabbage Soup

Serves 6-8

1/2 head of green cabbage, chopped
3 ribs of celery, chopped
1 small onion, chopped
28 oz. can diced tomatoes, drained of juice
32 oz. box chicken broth
2 Tbsp tomato paste
1 Tbsp butter
1 tsp Hot Hungarian paprika
2 tsp hot sauce
1/4 tsp cayenne pepper
salt and pepper, to taste

Melt the butter in a large pot. Add the chopped celery, onion, and cabbage to the pot and season with salt, pepper, and tomato paste, tossing to coat. Stir in paprika, hot sauce, and cayenne pepper. Cook over medium heat, stirring occasionally until softened (about 6-8 minutes). Pour in the chicken broth, and add the drained tomatoes to the pot. Simmer over medium or low heat until flavors are well-blended.
